Podcast 32: Eat the Mediterranean Way
If we could click our heels and be in Spain or Italy right now, we’d be the happiest dietitians in the world. That’s because the foods of the Mediterranean — olive oil, nuts, legumes, seafood, vegetables, whole grains — are some of the healthiest and most delicious on the planet. Recently, we attended a Mediterranean diet conference sponsored by Boston-based group called Oldways. At the meeting, we hobnobbed with scientists, chefs and fellow health professionals and sampled everything from artisinal olive oils to French cheeses.
For this week’s Cooking with the Moms podcast, we share two of our favorite Mediterranean-inspired recipes: Potato Ole Omelet and Walnut Cannellini Wraps. We promise your kids will like the recipes as much as the adults do! The tortellini with walnut pesto is a new standard in our house - thanks! I can’t wait to try to mini mango cheesecakes. I also enjoyed this week’s show about Mediterranean style foods. The Potato Ole Omelet had me hooked on the book plus I loved the idea of using the broiler that I had never used before and didn’t have to worry about flipping the omelet over.
The Walnut Tortellini sounds awesome! I just looked it up and need to try that one soon.
Can you tell me more about the ragu tomato and basil lite? I tried finding it in the grocery store and didn’t see it the other day. Did you get it more at a speciality type of grocery store?
that potato omelet sounds pretty tasty, i’ll try cooking that up one night for soul food supper, maybe serve with a green salad. can’t wait to try it!

Ann, we agree about flipping the omelet. Cleaning up the mess of a failed flip would take longer than cooking the omelet. Liz found the Ragu Light Tomato & Basil sauce at a local Stop & Shop. You should be able to find it but if you have trouble check out the Ragu product locator feature on their website: http://www.ragu.com/product_locator.asp. We like this product because it is lower than most pasta sauces out there and it’s tasty! Let us know if you find it and what you think.
