Marian M. is a mom of three kids from Wentzville, MO. Feeding her troops – Tyler, Kailyn and Ally – can be a challenge, but that hasn’t stopped Marian from teaching her kids that a diet filled with nutritious foods can taste really good. In three weeks, her husband Tyson returns from Iraq where he has served as an Army officer since January 2008. During his absence, she made it her mission to cook healthy meals for her family, lose weight, and get in shape.  “I have lost 26 pounds and feel like I am in the best shape of my life!” Marian told us.

We first connected with Marian on Facebook when she sent us the following message on our Meal Makeover Moms’ group page:  I would love to know if you have a good healthy recipe for potato soup… it’s so full of fat normally!

Marian’s message got us fired up.  Potatoes are naturally fat free, a great source of vitamin C, and have more potassium than a banana, but when cream and butter get added to the mix, pureed potato soup can indeed be full of fat.  So we set out to create a lighter, leaner recipe for potato soup (see below).  The recipe was incredibly easy to make. Blending Potato Carrot Soup

Potato Carrot Soup with Goldfish Croutons
Makes 6 Servings

  • 1 tablespoon extra virgin olive oil
  • 1 small onion, finely diced (1/2 to ¾ cup)
  • 2 to 3 stalks celery, finely diced (about ½ cup)
  • 4 cups all-natural chicken broth (one 32-ounce container)
  • 2 pounds russet potatoes, peeled and cut into 1-inch pieces (about 5 cups)
  • 2 medium carrots, peeled and grated (about 1 cup)
  • 2 sprigs fresh thyme
  • 1 cup frozen corn kernels, thawed
  • 1/2 cup shredded reduced-fat Cheddar cheese
  • Salt and freshly ground black pepper
  • Whole grain Goldfish crackers for garnish (about 9 per bowl)

1. Heat the oil in a Dutch oven or large saucepan over medium heat. Add the onion and celery and cook, stirring frequently, until the vegetables are soft, about 8 minutes.

2. Add the broth, potatoes, carrots, and thyme. Stir to combine. Raise the heat to high, cover, and bring to a boil. Reduce the heat and cook at a low boil, uncovered, until the potatoes are soft, about 15 minutes.

3. Remove the thyme. Use an immersion blender to puree the soup (or let cool slightly, transfer to a blender, and puree in batches).

4. Add the corn and cheese and stir until the cheese melts. Season with salt and pepper to taste. Serve in individual bowls and top with the Goldfish.

Nutrition Information per Serving (1 cup):  230 calories, 5g fat (1.5g saturated), 520mg sodium, 39g carbohydrate, 5g fiber, 8g protein, 70% vitamin A, 60% vitamin C, 10% calcium, 10% iron

    Yum! Potato Soup is my favorite so I’d love to try this recipe with an immersion blender. Right now, my blender is mainly used to make baby food. I’m finding it to be a money saver and I like being in control of the ingredients in my baby’s food.

    I love blended recipes – soups and smoothies. One of my fav’s is a smoothie with Organic 1% or no-fat yogurt mixed with frozen fruit mixes such as blueberry, strawberry, blackberry and pineapple – it’s a delish antioxidant treat!!

    My favorite use for a stick blender is scrambling eggs. It may seem like overkill, but I don’t care for unmixed egg whites. The stick blender makes a a fantastic homogeneous blend. It’s never goopy and always perfect.

    I’d love to win one to make preparing healthy homemade baby food for my son so much easier. I used a regular blender several times a week for months when I made babyfood for my daughter but it was a pain in the neck. So much of a pain that I almost want to just buy jarred food for my son, (especially since I’m back to work so much sooner this time around) BUT I attrubute my 2 year old daughter’s healthy eating and very accepting palate to the fact that I made all her baby food from scratch. I want to do it for my son but I need an easier way! Help!

    Watermelon Gazpacho is a great blended summer soup.

    8 cups finely diced seedless watermelon
    1 medium cucumber, peeled, seeded and finely diced
    1/2 red bell pepper, finely diced
    1/4 cup chopped fresh basil
    1/4 cup chopped flat-leaf parsley
    3 tablespoons red-wine vinegar
    2 tablespoons minced shallot
    2 tablespoons extra-virgin olive oil
    3/4 teaspoon salt

    An immersion blender would certainly save me getting out the liquidizer each time i make it!

    my favorite smoothie recipe includes one frozen, over-ripe bananna, 100% fruit juice (whatever is in the fridge), greek style yogurt (plain, low fat), a scoop of vanilla flavored protein powder, vanilla soy milk, and a handful of frozen berries. (amounts depend on your taste…if you like a thicker drink, add less juice and more yogurt etc.)

    Would you believe that my son and daughter BEG me to make my sweet pepper soup! Its so easy, and so tasty and so healthy. I cut up about 4-5 red, yellow and orange peppers along with 2 onions, sauteed in olive oil until softened and golden. Add vegetable (or chicken ) broth, about 2 cans, one cup water, salt, pepper and spices to your tasting… I love fresh dill! Cook for about 15 minutes, then puree in batches. I add it all back to the pan, reheat with a half cup to a cup of low fat sour cream or plain yogurt. In 30 minutes or so, a smooth, tasty fresh soup is ready…I serve it with crusty bread. There are never left-overs!

    This looks really neat. I would have to say my favorite blender recipe is Pesto made in the summer after visting the farmer’s market. It is just Fresh Basil, Pine Nuts, Garlic, EV Olive Oil & Parmesan cheese. The Pesto is good on everything from pasta, pizza to crackers.

    Smoothies, pureed cauliflower, sauces and SOUP SOUP SOUP! My favorite thing to do is use blenderized veggies from my soups as a thickener. I remove a portion of the soup filling, blenderize it, and then add it back in.
    Because my daughter has a gluten allergy cornstarch as thickener is not an option. I enjoy using a butter and rice flour roux but being able to add in pureed veggies it is a great lower fat and gluten free option.
    My food processor broke so I have been using the blender to do this and it is messy and not high powered enough to purée it as much as I would like. The immersion blender would be a wonderful gadget to have in my kitchen!

    Immersion blenders are fantastic, and I’d love to win an upgrade! Our blender never even makes it back into the cupboard since we’re always using it! I love to make soups with it – my latest favorite is a tomato bread soup:
    1 loaf whole wheat bread – a few days old
    2 cans diced tomatoes
    4c veg broth
    basil, garlic, salt, red pepper flakes to taste
    Simmer all ingredients in a large pot for an hour, stirring occasionally until the bread is mush. Run the immersion blender through the soup to get a thick, creamy consistency. Enjoy!

    My boyfriend makes breakfast smoothies daily with frozen berries, mangos, pineapple, kiwi and vanilla soy milk. Yum!

    I would love a to win the immersion blender because my 14 year old is starting to be more conscientious about what he is eating and actually is making things himself (finally!!). We love smoothies and usually put a banana, strawberries, kiwi, or pineapple with lofat vanilla yogurt with a splash of orange juice.

    Wow, another great giveaway! I am always on the go and love smoothies with milk, frozen fruit, protein powder. I hate to dig out the big blender for a single serving, and no one else in the house likes them. This little mixer would be so handy in the morning. Also, I make a lot of soups in the winter, and once again, have to dig out the blender to puree some to make a cream soup. AND lastly, I love red beans and rice, and this would cream up the beans like a dream.

    We make fruit smoothies on a regular basis at our house. some all time favorites are blueberry banana:
    1 cup froz. blueberries
    1/2 froz. banana
    soy milk (or cow’s milk)
    *no need to add sugar, the blueberry/banana combo is just perfect, plus we love to use vanilla soy milk, which is a little sweet.

    Another favorite smoothie is chocolate banana. This one is a treat for sure!
    1 froz. banana
    3 tbs. (heaping) of ovaltine syrup or powder (we don’t use malt)
    soy milk (or cow’s milk)
    *if you really want a treat, add a scoop of vanilla fro yo or soy delicious!

    ***These are both great ways to sneak in supplements. My daughter is gluten-free and takes several supplements per day. We used to mix all of them in smoothies, and now, finally, she will take them on her own.

    I love making creamy tomato soup. However, I always have to do it in tons of steps because I have to put some in a food processor, process it, then dump that in another bowl, take some more and process it, etc. It’s a pain!! Therefore, this immersion blender would be fabulous!! 🙂

    Recipe for a Carmel Banana Shake
    1 cup cold milk
    1/2 medium ripe banana, peeled, cut in small pieces
    2 large scoops vanilla ice cream
    2 tbsps. caramel or butterscotch sundae sauce
    Place milk, banana, ice cream and sundae sauce in Large bowl or vessel and blend until smooth.

    Blenders are a mom’s best friend!

    In addition to using mine to puree just about everything to sneak into just about every recipe, I recently made an amazing pasta sauce full of veggies and meat and deliciousness. But my kids balk at “stuff” in their sauce, so once done I was able to blend it to a rough applesauce texture and they (and my husband) both loved it – and were none the wiser.

    Ditto for beans – I slow cook dried beans in the crock pot (much less expensive that way, and better than canned since I control how much/little salt) and then use an immersion blender to soften them up into “refried beans”

    That potato soup looks great!

    Since I use my immersion blender with the crock pot, often, I would love a cordless one. THe wire gets all tripped up and goopy as I wrestle for vacant outlets and elbow room to maneuver in my not-so-big kitchen.

    What a great gadget! Anytime I need to blend something I have to haul out our hand blender and find the attachments for the particular job. Then have to clean all the parts up afterwards. A lot of work! This looks great to use and easy to clean! I can think of all kinds of things I could use this for: cake batter, pancake batter, scrambled eggs, mixing pitchers of lemonade, spagetti sauce….the list is endless! I would love something like this to make my time in the kitchen a little less!

    I love to make zucchini soup with sauteed onions, garlic, and fresh zucchini. I put in in the blender, since I don’t have an immersion blender, and then add some milk or soy milk. Yum! The soup is great hot, cold, or room temperature, and we add croutons or melt cheese into it. It’s very versatile and the kids love it! An immersion blender would make it much easier to prepare our favorite soup.

    This would be awesome for soups – and with fewer dishes to wash – Yeah! Here’s my recipe for my favorite Banana, Pineapple, Papaya Smoothie. 7 cubes of ice, 2-3 whole bananas, 1 cup of fresh papaya (you can get these at BJs now for like $3!), 1/2-3/4 cup of fresh pineapple. Fill blender halfway to the top of the fruit with a high quality OJ. While blending, add 2T of honey and 2T of ground flaxseed. It’s awesome!

    I love a good smoothie. My favorite is a strawberry one using frozen strawberries, skim milk, and protein powder (also good with raspberries).

    I would love one of these for those times I don’t want to make a ton of smoothies but just one for myself! Getting my whole big blender out can e a hassle.

    My favorite blender recipe is definitely smoothies. But I don’t think most of our smoothie recipes would work very well with an immersion blender (too much frozen fruit). I’d love to have an immersion blender for soups!

    Our morning smoothie usually includes milk/yogurt, frozen bananas, frozen strawberries, canned crushed pineapple, about a tablespoon of flaxseeds and a small handful of almonds. There are variations – I sometimes add some apple or carrot or a few leaves of spinach (my kids won’t drink it with much, but three leaves is better than none 😉 ), etc. And I don’t measure anything; I just dump it in.

    We grow raspberries and one of my favorites is a raspberry, bananna, and yogurt smoothie. I also use a little (or a lot of)whipped cream on cakes instead of frosting. And, I thicken veggie soups by blending some of the soup and potato or beans. The blender would be great for all of these. Thanks for the chance to win one.

    I recently broke my beloved immersion blender – I can’t tell you how often I used this appliance. Probably first – babyfood purees, all the time. I have a 1 year old, 3 year old and 5 year old. A close second would be soups – we do a lot of soup and I usually make a huge pot of it – I’ll split the recipe and then tweak half of it with a blender and adding different ingredients – make regular blackbean soup into a southwest blackbean, take minestrone veggie soup and add pasta to half and chicken to half. Then freeze portions for later. Love, love, love the immersion blender. When we lived overseas and I had to cut back on my kitchen stuff – the immersion blender was one of the first appliances I bought to use while we were there. I can’t imagine how people live without it!

    I like to make potato broccoli soup and puree about half of it, leaving the other half chunky. Recently, when my youngest daughter got her braces on, I pureed a whole batch so she could eat it without chewing. It tasted great, even without the chunks!

    Seriously though, this is a beautiful tool that I would love to have. I have a nice blender, but my immersion blender broke last year and I have yet to replace it. I love to puree soups (especially minestrone) to give it a thicker texture without using a roux or other starchy thickener. It is a really nifty invention!

    I have a really old, inexpensive immersion blender that does the trick when needed…but those really nice ones always catch my eye at the store! My favorite use for it is for getting all the chunks out of my favorite crockpot apple butter recipe:

    5 apples peeled, cored, sliced
    1/4C honey
    1/8C apple cider
    1/2 TBSP cinnamon
    1/8 tsp cloves

    Cook in a smaller appetizer size crockpot for 8 hours, blend with immersion blender, continue cooking with the lid off 1-2 hours until thickened. Yummy on english muffin bread!

    1 cup shredded cheddar cheese
    1/2 cup cooked chicken or ham or bacon, cubed, shredded or crumbled
    1/2 cup frozen zucchini or spinach or broccoli, cooked
    3 eggs
    1/2 cup baking mix
    1/2 teaspoon salt
    1 dash garlic powder
    1 tablespoon dried onion flakes
    2 tablespoons chopped fresh parsley
    1 1/2 cups milk
    1/3 cup olive oil
    1/2 teaspoon paprika

    Preheat oven to 350 degrees F.
    Grease a 9 inch pie pan.
    Spread shredded cheese in bottom of pie pan.
    Cover cheese with meat and vegetables.
    In a blender, combine eggs, baking mix, salt, garlic powder, onions, parsley, and milk.
    Blend until smooth, then add olive oil.
    Blend until combined, then pour mixture over meat and vegetable layer.
    Sprinkle with paprika.
    Bake in preheated oven for 40 minutes.
    Cool 10 minutes before serving.

    When I make a beef brisket, I also add in lots of tomatoes and carrots–along with garlic and onion. After simmering for four hours, I take all the liquid and vegies and put them in the blender. Voila–it becomes a thick, delicious, and healthy gravy! This blender sounds amazing. Great giveaway Moms!

My favorite is balsamic vinaigrette – balsamic vinegar, olive oil, salt, pepper, 1 teaspoon dijon mustard and optional chopped garlic or shallot. An immersion blender would make this even easier and I would love to learn some new recipes.

    As a busy, full-time working, single-parent mom of 3, you can probably guess how hectic life can be. My 18 year old is visiting colleges while my 15 year old plays on his school and rec league baseball teams and is adding in umpiring Little League this spring. My 9 year old plays Little League (but not with his brother ump’ing of course).

    With our hectic schedule, we seldom end up eating at home. I’m on Weight Watchers and making healthy changes in my life (25 pounds so far!) and changing my family’s eating habits is high on my list of priorities.

    I can see this as a tool to help in so many ways! My 15 yo would love smoothies to grab to drink in the car on the way to school. He’s drinking a lot more milk trying to “bulk up” for sports.

    My 9 yo and I are planning to grow tomatoes and peppers this spring to make our own Salsa — just some tomatoes, olive oil, peppers and whatever else he throws in.

    My 19 yo likes to cook, too — always trying something new like a Sweet Potato / Chicken soup last night. I’m sure she would enjoy chopping up the celery, onions and peppers with a tool like this and blending some of the soup to make it creamier without adding fat.

    I would love to add this “convenience” appliance to a diet where we’re trying to limit “convenience” foods!

  89. My favorite blender recipe is so easy and delicious and also helps use up rotten bananas. Yes, rotten bananas 🙂

    First, if your bananas start heading south, seal them up in a plastic bag and put them in the freezer. Then:

    1 frozen banana
    1/2 cup milk (or more to taste)
    3 – 4 ice cubes

    Peel the banana (you can run it under warm water to loosen the skin) and toss the skin. Put banana, milk and ice cubes in the blender and puree.

    You can use fresh bananas, just add a few more ice cubes.

    Roasted carrot, onion, and potato soup. Roast, blend with some chicken or veggie stock and voila! Add a tablespoon of cream or sour cream before plating if you want to make it richer.

    We love to blend! We have a great recipe for spinach soup:
    2 10 oz packs of frozen chopped spinach
    3 T butter
    3 T minced onion
    3 T flour
    6 cups milk
    1 1/2 t salt
    1/2 pepper
    dash nutmeg
    optional: chives and sour cream

    Can cook spinach in microwave.
    saute onion in butter till soft – 5 minutes. Mix in flour and gradually add milk. Add remaining ingredients and heat for at least 15 minutes. Use the immersion blender to smooth out the soup. Serve with dollop of sour cream and chopped chives…

    For some reason ALL the kids love this

    I would love to have this blender to use for sauces and purees and such. You dont have to cool the food down beforehand. You can blend things steaming hot if you want to! And so much easier to clean than a regular type blender.

    Grilled Sweet Potato Sandwiches

    Bake sweet potatoes whole, then cool.
    Peel, then use immersion blender to puree.
    Schmear puree’d sweet potatoe onto buttered bread and fry in pan.

    I freeze the leftover sweet potato in 1/2 cup portions in ziplock bags. The bags thaw in minutes in warm water for a quick, healthy and deeelicious grilled sandwich.

    I also use a lower fat butter substitute and whole grain bread.

    My fav blender recipe is a simple soup of frozen asparagus cooked in veg broth and blended till creamy. I started making this for my daughter when she was about 1, and she really liked it (so did my hubby and I)

    I would love a hand blender, it sounds so convenient. Our blender is out of commission since our downstairs neighbor’s apt caught fire and most of our stuff was lost to smoke damage. Anykind of food item with plastic had to be tossed due to toxic smoke contamination. We haven’t gotten around to getting a new blender yet.

    My aunt has one of these and whips up homemade mayonnaise and great soups similar to your potato carrot soup.

    I’d like to win so I can also make these types of soups and to add some body to dishes when needed. I once tried adding mashed beans to a so-so stew I made but my mashing the beans with a fork did not give them the right consistency. This product would be perfect for the task.

    I’m pregnant, and when I had my bloodwork done I found out that I’m very low on Iron.
    I’ve been making smoothies every day to boost my iron intake. I use a large handful of spinach, 2 dates, about a half cup of soy milk, some coconut milk, almond butter, ground flax, protein powder, half a banana, and a handful of frozen blueberries, or cherries!!

    My sister and mother have been trying to get my nephews to eat a bit less picky. They are 3 and 4. They of course love ice cream. So I have come up with putting vanilla flavored yogurt and bananas, blueberries (frozen) and frozen peaches plus a bit of ice into a blender and they think they are tricking their mother because it tastes like ice cream. Of course I have the yogurt that is Organic and the fruit is good for them. I don’t add any sugar so they just think they are getting treats.

    I love Creamy Potato Soup and will be taking this recipe with me Thanks! I would love this blender it would make it so easy to make soups and hot things creamy without putting them in the blender. Also I bet I would love this for Mashed Potatoes.
    I would use this mostly for my Creamed Cauliflower, I steam the Cauliflower sometimes with Carrots if I have them on hand, a glove of garlic, Then when finished I put it in the Blender and blend it. Wonderful but not easy putting hot things in the blender.
    Also we love Smoothies with Fresh Fruit, and Yogurt.. yummy!

    As a family we love Cauliflower mash … its made the same way one makes mash pototoes except inside of potatoes we use cauliflower. It tastes delicious and its lower in calories … but its hard work mashing the cauliflower with a fork so a hand blender will be very welcome in my kitchen.

    I love to make potato soup but I’ve never even thought about blending it like this. I like to add a brick of cream cheese just at the end of a potato soup to add some extra creaminess and flavor.
