A Message From The Moms

Despite the fact that the holidays are in full swing, we’re still managing to find the time to cook up a storm. We are more motivated than ever to write a sequel to The Moms’ Guide to Meal Makeovers. You’re going to love our new recipes! And stay tuned, because very soon we’ll be asking for volunteers to test our recipes. Your comments will be invaluable as we “tweak” each and every one to meet your family's needs.

This fall was a hectic time for “The Meal Makeover Moms.” In October, Janice had the pleasure of participating in the Everything Fit & Healthy Expo in Burlington VT. She conducted three cooking demonstrations, went on a half-mile walk with Governor Jim Douglas, and was featured in the Burlington Free Press! Read the PDF...

While Janice was up north, Liz stayed right at home and hosted a production crew from Better Homes & Gardens (photographer, food stylist, art director) as they documented how she feeds her family with good nutrition in mind. Look for the eight-page photo spread in BH&G’s new magazine, Heart Healthy Living in February. In between all the craziness, we conducted cooking parties, wrote for several magazines including Nick Jr. Family Magazine, Baby Talk, and Diabetic Living, and somehow managed to carve out plenty of time to be with our kids.

You may be wondering why we created a clam chowder recipe with soymilk versus milk or cream. Well, as it turns out, a few of our Moms’ Club members who have family members allergic to milk asked us for dairy-free recipes that their kids would actually eat. At first glance you may think our recipe is too strange or weird to be a winner with your family. But once you try it, you will be completely surprised. Can-Do Clam Chowder is sweet, creamy and thoroughly delicious. Why not challenge everyone at the table to identify the “secret” ingredient? We guarantee they’ll all be stumped.

Can-Do Clam Chowder
Makes 4 to 5 Servings

One large sweet potato, peeled and cut into 1/2-inch cubes (about 3 cups)
3 tablespoons canola oil
3 tablespoons all purpose flour
2 1/2 cups Enhanced Silk Soymilk *
1 1/2 cups frozen corn kernels, thawed
Two 6 1/2 cans chopped clams (with their juices)
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
Pepper to taste

Steam the sweet potato until tender, about 8 minutes. Set aside. Heat the canola oil over medium heat. Gradually whisk in the flour. Cook over medium heat for 2 minutes until golden. Gradually whisk in the soymilk (at first, it will appear very lumpy so keep whisking until smooth). Raise the heat to medium high and continue to whisk for about 5 minutes until the mixture comes to a simmer. Stir in the sweet potato, corn, clams, Worcestershire sauce, and onion powder. Let simmer 5 minutes, stirring occasionally. Season with pepper to taste.
* Enhanced Silk Soymilk is fortified with vitamins, minerals and omega-3 fats. If you cannot find it, use Original Silk Soymilk.

Nutrition Information per Serving: 320 calories, 14g fat, 1g saturated fat, 1.3g omega-3 fat, 760mg sodium, 35g carbohydrate, 10g sugar, 4g fiber, 14g protein, 260% vitamin A, 40% vitamin C, 25% calcium, 15% iron
