A Message From The Moms

In our last newsletter, we told you about Recipe Rescue, a half-hour television cooking show that we taped and co-hosted back in May. In the program, we cook with a busy mom and show her how to lighten up her favorite holiday recipes. The producers of Recipe Rescue created the program with PBS in mind, hoping the network would pick up the show and air it during the holidays. Just last month, we got word that PBS would indeed be running the show nationwide later this year. Yippee! We’ll let you know about air dates and times so you can watch us in action.

But who can think about winter when we’re just saying goodbye to summer. It’s hard to believe the kids are back in school and parents everywhere are once again faced with the morning ritual of packing lunches. To give you some fresh ideas, check out our recent article in Nick Jr. Family Magazine, Think Outside the Lunch Box or go to our Discussion Board and share your children’s lunch box favorites. And speaking of our Discussion Board, some of you may have noticed that for the first time, our Discussion Board was infiltrated by spammers. Frustrated because your kids won’t eat their fruit? Worried that your family isn’t getting enough heart-healthy omega-3 fats? Well, you can breathe easy with this easy-does-it dessert. Made with nutrient-packed apples, blueberries, walnuts, and ground flaxseed, it’s sure to please everyone at your table. Serve with low-fat vanilla frozen yogurt on the side!

Apple Blueberry Walnut Crisp
Makes 6 Servings

Filling:
3 large red or golden delicious apples (about 2 pounds), peeled and cut into 1/2-inch pieces (about 4 cups)
2 tablespoons packed brown sugar
2 tablespoons whole wheat flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 pint blueberries (1 cup)

Crisp topping:
3/4 cup walnuts, very finely chopped
1/4 cup old-fashioned or quick-cooking oats
2 tablespoons packed brown sugar
2 tablespoons whole wheat flour
2 tablespoons ground flaxseed
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons canola oil

1. Preheat the oven to 400°F.
2. Combine the apples, brown sugar, flour, vanilla, and cinnamon in a large bowl and toss to coat. Gently toss in the blueberries. Place the apple mixture in an 8 x 8-inch baking dish and set aside.
3. To make the topping, combine the walnuts, oats, brown sugar, whole wheat flour, flaxseed, cinnamon, and salt in a medium bowl. Add the canola oil and stir until the dry ingredients are well coated.
4. Spread the topping evenly over the fruit mixture. Bake 40 to 45 minutes, or until the fruit is tender and the topping is golden brown (cover with foil if the topping browns too quickly).

Nutrition Information per Serving: 260 calories, 16g total fat, 1.5g saturated fat, 2.3 g omega-3 fat, 105mg sodium, 30g carbohydrate, 4g fiber, 4g protein
