A Message From The Moms
Since you last heard from us in February, we decided to overcome our fear of technology and create our very own blog. You can find The Meal Makeover Moms’ Blog at MealMakeoverMoms.Blogspot.com.
Our goal with the blog is to bring you our yummiest new recipes and our latest mealtime tips and tricks, all designed to help you and your family eat a healthier diet. By the way, in case you too have issues with technology (hey, we can’t even program our VCRs), Wikipedia defines a blog as "a user-generated website where entries are made in journal style and displayed in a reverse chronological order."
We plan to update the blog at least once a week, and hope when you visit that you’ll post lots of questions and comments (your feedback will help us tailor our advice to meet your particular needs). Simply click on the "comments" link at the bottom of each post, pick a user name (or you can post anonymously), and type in your message. As a special "thank you" for posting, we will enter you in our Moms’ Blog giveaway -- unique to the blog page -- for a private 1-hour nutrition phone consultation with us: The Meal Makeover Moms. We can’t wait to announce our first winner in May!
Besides the new blog, we just wrapped up several days of video production in Janice’s kitchen where we taped mealtime tip segments and cooking demonstrations for some of our favorite makeover recipes – Apple Blueberry Crisp, Coconut Chicken Fingers, Corny Salmon Cakes, and Mommy's Edamames. The video segments will be available on our website soon. In the meantime, we’ve posted a few of our videos on our new Blog.

Yvette H., mother of three from Mason, Ohio told us her family loves sugar cookies. But the problem with their favorite recipe, and the reason Yvette “cringes” when she makes it, are the ingredients: margarine, shortening, sugar and white flour. To give her cookies a makeover, we swapped the margarine and shortening for canola oil, substituted half the white flour with whole wheat, and added heart-healthy almonds. As for the sugar, we kept her 3/4 cup, because the way we look at it, a modest amount of sugar is okay as long as it comes with plenty of good-for-you ingredients.
Almond Sugar Cookies
Makes Three Dozen 3-Inch Cookies
1 cup all-purpose flour
1 cup whole wheat flour
1 cup almonds, very finely chopped
1 teaspoon baking powder
1/2 teaspoon cinnamon
3/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup canola oil
2 large omega-3 eggs
2 tablespoons honey
1 teaspoon vanilla
3 tablespoons granulated sugar
1. Preheat the oven to 375°F. Lightly oil or coat two large baking sheets with nonstick cooking spray and set aside.
2. Whisk together the all-purpose flour, whole wheat flour, almonds, baking powder, cinnamon, and salt in a large bowl and set aside.
3. In a separate bowl, combine the sugar, canola oil, eggs, honey, and vanilla, and beat on medium speed until well blended, about 2 minutes. Scrape down the sides of the bowl if necessary.
4. At low speed, gradually beat in the dry ingredients until just combined.
5. Place the 3 tablespoons granulated sugar on a plate or in a shallow bowl. Roll the dough into 1-inch balls and coat evenly with the sugar. Place the cookies on the prepared baking sheets, leaving space in between. Flatten the cookies gently with the back of a fork.
6. Bake for about 8 minutes, until golden brown. Transfer the cookies to a wire rack and cool for 5 minutes before serving. Repeat with the remaining batter. Tip: If the batter gets too sticky, chill in the refrigerator for about 10 minutes.
