A Message From The Moms
Every part of the country has its own special culinary traditions, and here in New England, one tradition we savor every autumn is apple picking. Whether you pick them yourself or grab your favorite variety at your local farmer's market or supermarket, apples are ideal as an out-of-hand snack or an ingredient in sweet, luscious desserts. To celebrate all that apples have to offer, try our recipe for Apple Butterscotch Cake posted on our blog. According to Liz's son Josh, "this is the best recipe you and Janice ever made!"
And speaking of new recipes, when you last heard from us back in August we were busy baking holiday cookies for a Kiwi Magazine article. Happily, Kiwi continues to keep us in the kitchen with a new challenge. This time we'll create healthier versions of two notoriously high-fat dinners: chicken pot pie and shepherd's pie. We promise to share all of our new recipes with you once they’ve been published!
Other fun news: November 9 – 11th marks the first annual Manic Mommies Escape in Newport, RI. At the getaway, busy moms will have time to relax, socialize, shop, indulge in spa treatments, and hear from inspiring women like Dena Blizzard, co-host of the PBS series, Real Simple and parenting coach, Kathy O’Brien as well as the two of us! We never miss an opportunity to “boost” the nutritional value of our everyday recipes which is why we added finely grated carrots, ground flaxseed, oatmeal, and an omega-3 egg to these family-pleasing meatballs. We also used lean ground turkey to keep the unhealthy saturated fat at bay … just be sure to buy ground white meat turkey vs. dark meat. Serve over spaghetti or in a whole grain hot dog bun or roll for a satisfying sub sandwich.
Garden Turkey Meatballs
Makes about 24 Turkey Meatballs (6 Servings)
1 pound ground turkey
2 to 3 medium carrots (6 ounces), peeled and finely grated (about 2/3 cup)
1 large omega-3 egg
1/2 cup quick-cooking or old-fashioned oats
1/2 cup grated Parmesan cheese
2 tablespoons ground flaxseed
1 tablespoon dried Italian seasoning
1/2 teaspoon salt
1/8 teaspoon pepper
One 26-ounce jar pasta sauce
Preheat the oven to 400°F. Spray a large baking sheet with non-stick cooking spray and set aside. Combine the turkey, carrots, egg, oats, Parmesan cheese, flaxseed, Italian seasoning, salt and pepper in a large bowl and mix until ingredients are just combined. Shape the meat mixture into twenty four 1 ½-inch balls. Place them on the baking sheet and cook until lightly browned, 10 minutes. Meanwhile, place the pasta sauce in a large saucepan over medium heat. Cover and bring to a simmer. When the turkey meatballs come out of the oven, add them to the sauce, reduce the heat and simmer, covered, about 20 minutes.
