A Message From The Moms

Although it’s now officially springtime, we’re still in hibernation, working tirelessly on our new website design, upcoming weekly radio podcast, and our next cookbook. We suspect it will be a couple more months before the new site launches, but in the meantime, you can take a peak at our new Meal Makeover Moms’ logo by checking out the April 14th posting on our Moms’ Blog. While you’re there, take a few minutes to share your thoughts on the kinds of recipes and features you hope to see on our new-and-improved website, the topics you hope we’ll cover on our podcast (launching on May 7th), and any favorite family recipes you want us to make over. As always, we’d love to hear from you!

In addition to our many fun projects, we’ve been elbow deep in new recipe development. Our Jello Jiggler makeover (see below) is guaranteed to make your kids smile because it’s squishy and sweet, and our Cookie in Disguise is one of those desserts parents can feel good about (we’ll be posting that recipe to the Moms’ Blog soon).

Last month, when we announced our giveaway for Nancy Clark’s new Sports Nutrition Guidebook, we asked you to share your best tips for getting kids to eat healthy and nutritious foods. Well, we received dozens of emails with so many fantastic ideas that it was hard to pick a winner! In the end, we kept coming back to Deb S. from Springfield, Ohio. Her children pack their own lunches every day, and they’ve been doing it since first grade. In their lunch boxes, they must include at least one fruit and one vegetable, a serving of whole grain, and a serving of protein. They also pack a water bottle and a small treat/snack. Deb says her children have learned to make good food choices on their own, and it all started from packing their own lunches. And be sure to check back often, because over the next few weeks, we’ll be posting more of your clever healthy eating ideas.

Jello Jigglers … what can we say? They’re loaded with artificial colors and lots of sugar – about 1 tablespoon per square – and no nutritional value whatsoever. We decided to give them a healthy makeover after hearing from Jess, a Moms’ Club member whose son is hooked on the jiggley hand-held squares. By using 100% fruit juice, frozen fruit, and plain gelatine, we created an all-natural treat that’s fun to eat and a lot lower in sugar.

Juicy Strawberry Jigglers

Makes 24 Jiggler Squares

1 1/2 cups strawberry kiwi juice, divided
1 cup frozen strawberries
2 envelopes unflavored gelatine
1 tablespoon sugar

In a blender, blend together 1 cup of juice and the frozen fruit until smooth. Pour into a small saucepan and bring to a boil. Stir occasionally to break up any frothy bubbles. Meanwhile, place the remaining 1/2 cup juice in a large bowl. Sprinkle the gelatine over the juice and let stand 1 minute. Add the hot juice and stir until the gelatine completely dissolves, about 5 minutes. Stir in the sugar. Pour the mixture into an 8 x 8-inch pan. Refrigerate until firm, about 3 hours. To serve, cut into squares (use an off-set spatula).

Nutrition Information per Serving: 10 calories, 0g fat, 0mg sodium, 2g carbohydrate, 2g sugar, 1g protein, 10% vitamin C

Juicy Mango Jigglers
Makes 24 Jiggler Squares

1 1/2 cups tropical mango juice blend, divided
1 cup frozen mango
2 envelopes unflavored gelatine
1 to 2 tablespoons sugar

Prepare as directed above.

Nutrition Information per Serving: 15 calories, 0g fat, 0mg sodium, 4g carbohydrate, 3g sugar, 1g protein, 10% vitamin C
