A Message from The Moms
Every year at this time, we shake our heads in disbelief as summer
break comes to an end and school begins. It’s been a busy summer for
The Meal Makeover Moms. We worked hard on our new website design (it’s
scheduled to launch very soon), worked tirelessly on producing our weekly
radio podcast, Cooking with the Moms, and posted to our blog every week
without fail. In between, we each enjoyed vacation time with our families.
Liz spent a few days on an island in Maine – highlights included her
son Josh catching a 7-pound lobster with a hook, line and hot dog (don’t
despair, he set it free) and eating local mussels, gathered by Liz herself – and
Janice traveled to the beaches of Rhode Island where she feasted on lobster
(not nearly as big as the one Josh caught) and locally-grown corn and tomatoes.
With the start of school we realize that a lot of you will be back
in the daily swing of making and packing lunches. For new ideas, tune in
to our August 20th School Lunch Stuffers podcast and be sure to try our
Makeover Recipe for Cookie in Disguise (see below). It’s perfect as
an after-school snack or a lunch box dessert.

Makeover Recipe
Cookie in Disguise
Makes about 3 1/2 dozen cookies
These irresistibly crunchy on the outside, chewy-on-the-inside cookies
are packed with health-enhancing ingredients and are guaranteed to keep
the troops happy. Our cookie, made with whole wheat flour, whole grain
cereals, chopped nuts and dried fruit, is so yummy, it’s hard to
believe it’s actually good for you!
1 1/2 cups quick-cooking oats
1 1/2 cups honey grahams cereal, crushed into pea-size pieces (we like Mom’s Best Naturals)
1 cup pecans, finely chopped
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup dried blueberries or currants
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, beaten
1 cup packed brown sugar
1/2 cup canola oil
2 tablespoons pure maple syrup
Preheat the oven to 350ºF. Lightly oil or coat two large baking
sheets with nonstick cooking spray and set aside. Whisk together the
oats, honey grahams cereal, pecans, whole wheat flour, all-purpose flour,
dried blueberries, baking soda, and salt in a large bowl. In a separate
bowl, whisk together the eggs, brown sugar, oil, and maple syrup until
well combined. Pour the liquid ingredients over the dry ingredients,
and stir until just moistened. Working in batches, roll the batter into
1-inch balls and place on the prepared baking sheets, leaving about 1
inch in between. Bake 12 minutes, until golden brown. Cool for 5 minutes
on the baking sheet before transferring to a wire rack. Repeat with remaining
batter.

Information per Serving (one cookie): 100 calories, 5g fat (0g saturated, 1.1g omega-3), 65mg sodium, 13g carbohydrate, 1g fiber, 1g protein
