Happy 2009!
Though we say this all the time,
it continues to amaze us how fast time flies by. This year, we have
loftier
goals than ever. We still plan to write
our second cookbook (please don’t hold your breath but do stay tuned)
and are
eager to expand our outreach through the internet. Our blog will grow
to be bigger and better in
2009, we recently launched a Meal Makeover Moms Facebook group, and in the coming weeks, we will launch a Flickr page. Liz is also on Twitter -- we hope you’ll follow her at

For
the past few weeks, we’ve been in the Meal Makeover Moms’ test kitchen (AKA
Janice’s home kitchen) testing recipes in our new Fagor Duo pressure cooker. Wow,
what an awesome way to get healthy meals on the table … FAST. After speaking with Jill Nussinow,
a dietitian friend known as The Veggie Queen, we realized that life was simply
not complete until we discovered the pressure cooker. Jill’s guest post to our blog on January 23rd
highlights the many flavor, health and time-saving benefits of cooking in a
pressure cooker. In the post, we also announce our exciting giveaway for a

Makeover Recipe
Butternut Squash Risotto Makes Four 1 cup Servings
Rich, creamy
risotto is one of those dishes that require TLC and a lot of hovering and
stirring over a hot stove. To speed up the process considerably, we used our
handy new pressure cooker. The addition of brightly colored butternut squash
adds an appealing burst of orange as well as a big boost of great nutrition.
2 tablespoons
olive oil
1 ounce
pancetta, chopped
1 small
onion, peeled and finely chopped
1 cup Arborio
rice
2 cups diced butternut
squash (1/2-inch dice)
2 cups
all-natural chicken broth
1/2 cup
grated Parmesan cheese
In the
pressure cooker, heat the oil over medium heat. Add the pancetta and onions and sauté for five
minutes, stirring frequently. Add the rice
and stir for two minutes until coated with the oil and slightly toasted. Add the squash and chicken stock and stir
well. Lock the lid in place and bring the mixture to a boil over high heat
until you achieve high pressure. Reduce the heat to maintain pressure for 10 minutes.
Release the pressure and open the lid, tilting it away from you. Stir in the cheese
and serve.

340 calories, 12g fat (3g saturated), 500mg
sodium, 49g carbohydrate, 5g fiber, 10g protein, 140% vitamin A, 20% vitamin C,
15% calcium
