Berry Good French Toast

Ingredients

Strawberry Topping

  • 1 cup frozen strawberries
  • 1/4 cup of water
  • 1 tablespoon granulated sugar
  • Pinch of salt

Directions

  1. For the topping, place the strawberries, water, sugar, and salt in a small saucepan.
  2. Place over high heat and bring to a boil. Reduce the heat and continue to cook at a low boil, stirring every few minutes, until the berries break down and the mixture is nice and syrupy, 15 to 20 minutes.  To speed things up a bit, use the back of a spoon to smoosh the berries against the side of the saucepan as you stir.

  • 1/4 cup 1% lowfat milk
  • 1/4 teaspoon ground cinnamon
  • 4 slices 100% whole wheat bread
  • 1 teaspoon canola oil
  • Powdered sugar

Directions

  1. Whisk together the eggs, milk, and cinnamon in a large bowl.
  2. Heat the oil in a large nonstick skillet over medium-high heat.
  3. Dip the bread in the egg mixture, one slice at a time, and coat evenly. Place the bread in the skillet and cook until the bottoms turn golden brown, about 3 minutes per side.
