Desserts
Ah, dessert. As children, we remember coming home to the aroma of freshly baked cookies and the pleasure of taking those first gooey bites. Today, we enjoy our own children’s company at the kitchen counter. For some parents, however, desserts (which are often loaded with butter, shortening, sugar, and cream) bring on the guilt instead of the nostalgia. To bring pleasure back to dessert time, we switch from butter and cream to healthy oils like canola and go easy on the added sugar (though we don’t use sugar substitutes). We also weave in lots of health-enhancing ingredients including whole wheat flour, ground flaxseed, omega-3 eggs, wheat germ, chopped nuts, fresh and dried fruit, and vegetables (shhh!). Our Apple Butterscotch Cake, Chocolaty Coconut Mini Tortes, and Carrot Camouflage Cupcakes prove that special treats can indeed be good for you.
