Meatball Submarines

Makes 6 Servings

Ingredients

  • One 16-ounce bag frozen turkey meatballs (about 16 meatballs)
  • 1 1/2 cups pasta sauce
  • 1 medium carrot, peeled and shredded, (about 3/4 cup)
  • 6 whole wheat hot dog or sub rolls
  • 1/4 cup grated Parmesan cheese, optional

Directions

  1. Combine the meatballs, pasta sauce, and carrot in a medium saucepan.
  2. Place over medium-high heat and bring to a simmer. Lower the heat and continue to simmer, covered, stirring occasionally, until the meatballs are heated through, 20 to 25 minutes.
  3. Divide evenly among the rolls, sprinkle with Parmesan cheese as desired, and serve.
