Mexican Tonight
Besides its great, kid-friendly flavors, Mexican food can be easy to prepare and super nutritious. One of the things you’ll notice with many of our recipes is that we use canned beans – black beans, pinto beans, cannellini beans and refried beans. All are naturally high in protein, fiber and disease-fighting antioxidants (you may not know this but beans are technically a vegetable) and are oh-so convenient. We rinse our canned beans to wash away almost half the sodium. If you have the time or inclination to soak and cook your own beans we applaud you! In our recipes, simply replace about 1 ¾ cups cooked beans for each 15 ½-ounce can. Our Mexican Lasagna, Confetti Chicken Wraps, and Beany, Cheesy, Zucchini Quesadillas are perfect when you’re cooking for your family or entertaining friends.
